Healthier Living: Easy to Prepare Boneless, Skinless Chicken Breast

Want you and your family to eat healthier? You don’t necessarily have to make major changes to your diet to do it. Just adding a few more vegetables to your plate and limiting salt can make a difference. You can also replace a red meat meal (or two) a week with chicken. One of the easiest, most versatile cuts of chicken that is easy to prepare is boneless, skinless chicken breasts. Pound-per-pound, chicken is also still reasonable in price. Here are some super easy recipes your family will love.

Grilled Italian Chicken

It doesn’t get much easier than this. Marinate a few boneless, skinless chicken breasts in Italian dressing for a few hours and cook on the grill until done. To assure more tender chicken, tenderize the chicken breasts with a meat hammer prior to marinating. The Italian dressing adds a nice touch of flavor and keeps the breast moist.

Crock Pot Pulled Chicken

Place four boneless, skinless chicken breasts in a crockpot, pouring in about a half bottle of your favorite barbecue sauce. Heat on medium. In about six hours, the chicken should begin to pull apart with a fork upon mixing. Add more sauce to taste. Add some hot sauce if you like your food a bit spicey.

Shredded Chicken Sandwiches

Place six boneless, skinless chicken breasts in a crockpot, pouring in a can of cream of chicken soup and a can of cream of celery soup. Mix and cook on medium for 6 hours or more. The chicken should begin to pull apart after about 6-7 hours. Finish shredding with forks and serve on sandwich buns.

Boneless Chicken Wings

Cut chicken breasts into cubes that are about 1” square. Deep fry in oil heated to 350 degrees for about 5 or 6 minutes, drain, and serve with your favorite sauce. Add some celery and ranch or blue cheese dressing for an added touch.
